Zucchini Bread

My favorite recipe is Lynn's Spicy Zucchini Bread from The Victory Garden Cookbook. This book is a must have for gardeners and I read or reference it frequently during the growing season, so it is nice to see it back in print.

My copy first belonged to my grandparents and it's signed.

Is this not a fantastic use of a vegetable? Look at the gorgeous batter! It smells of sugar, cinnamon and nutmeg.

The recipe makes two loaves. I make batches during the growing season and freeze half loaf portions for later eating.

When I don't have time to bake (or the weather is just too hot for it), I grate the zucchini and freeze it in portions for using later on. Frozen zucchini can be used for bread, but also in things like soup.

That is so neat that you have your grandparents' copy of the book.

Have you picked your lettuce yet? I'm not sure how long to let mine go.

I pick leaves of lettuce off the plants as they grow, first as baby greens, then bigger ones...until they eventually go to seed when the weather gets hot.
