Dinner for a Rainy Summer Evening

Chicken with a mustard, tarragon cream sauce, peas and 'campfire' potatoes. You can see I like the sauce on everything, not only the chicken! It is one of my staple recipes.

The potatoes are easy to make. Place a sheet of aluminum foil on a sheet pan, add cut up potatoes and onion, season with salt and pepper and dot with butter. Bring the sides of the foil together and seal. Fold up/roll up the ends to seal as well. I refer to them as 'campfire' potatoes because this is what we always made at summer camp when I was a kid and we cooked them in the hot coals of our campfires. I cooked these in the oven set to 400 F for 1 hour. You don't get the smoky flavoring, but they are still good as the flavors are intensified from steaming inside the foil.

I didn't mind having the oven on in June as it was a cool, rainy evening!
