My Birthday!

Today, I had a very nice birthday and my presents will provide you with a major hint about my latest gardening project! I got the two Eliot Coleman books about year round gardening. And, I placed an order from Johnny's for fall/winter seeds. Pretty soon, I will reveal more about how we're getting ready for fall, winter and early spring gardening.

But for now, there is still a lot to report about the summer garden! I picked some gorgeous eggplants and used 3 of them to make Eggplant Parm for dinner. I froze half of the breaded, baked eggplant rounds to use at a later time. I've read that this is a good way to preserve eggplant. I think I can just thaw the rounds in a hot oven on a baking sheet and then assemble them as usual into the casserole dish for Eggplant Parm. I froze them flat on a baking sheet so they would be separate and I will bag them when they are solid and won't stick together. When I am ready to use them, I will take out just how many I need.

This was my big serving of birthday Eggplant Parm! I love it!

After dinner, Jeff helped me process all the tomatoes I'd picked earlier in the day to make more sauce for the freezer. This batch has at least one of every tomato variety in the garden! You can see a piece of Green Zebra on top. That is an amazing tomato--almost like a grape!

Happy birthday! Eggplant parmigian is a great choice for birthday dinner.
